Whitebait Fritters With Tomatoes

A lot of people go crazy here over whitebait. It’s ridiculously expensive like $170 per kg. But I have good friends that love to sit all day long along river banks and catch these small fish. So when my friend had about a bag full I suggested I would come over for lunch and make them into whitebait fritters.
These are super simple to make and don’t require a lot of garnish as you will want the very slight taste of the whitebait to come through.
Here is what they look like uncooked…
You will need a sieve or something similar to clean them with some running water. These were so fresh they even had a few pieces of twig in them straight from the river.
Ingredients
6 Eggs
1 cup of whitebait
Olive Oil or Butter
Salt and Pepper To Taste
1 Tomato
Here are all of the ingredients laid out. Whitebait of course, eggs and we used some olivine spread in place of olive oil or butter.
Preparation
Place the 6 eggs into a large bowl and whisk.
Add the whitebait and then whisk a little more.
Place a frying pan on the stove and add a little oil or butter and let it melt.
Ladle in some of the mixtures and allow to cook – Should only take a few minutes.
Flip over and cook for a few seconds on the reverse side.
Repeat until all of the mixtures has been used.
Garnish with some fresh Tomatoes
